It depends on the purpose. Changing a file extension doesn't change the content, it just tells the operating system what type of file it is and thus, what program should be used to open it by default. .dat is one of several file types which have no formal usage - they may contain any type of content, in any type of structure (plain text or binary). They can be used by different programs for different purposes, anything from text to images to save game files. As opposed to a file extension like .txt, which is almost exclusively used for ASCII plain text files (of course, there's nothing stopping someone from renaming their .jpeg images to .txt). So while the simple short answer is, change the file extension to .dat, in reality this is probably not enough to do what you require.

Go to control panel. In the view tab under folder options, uncheck "Hide extensions for known file types.
Rename your file from*.doc to *.dat.
