Using Illustrator:

When I'm working on the second layer, creating a text box gives me a red square. But I think I activated something that makes the textbox, as well as the actual text, bright blue while typing. Moving the cursor also produces bright blue lines with the text, e.g., "align 135" and "path". It's troublesome and unnecessary. What is it and how do I get rid of this feature?

It seems you have accidentally activated the 'Smart Guides' function. To turn it off, simply click 'View' and un-tick the 'Smart Guides' option. You could also press CTRL + U, which is the keyboard shortcut to toggle (activate/deactivate) the Smart Guide function.

You didn't say which version you're using, but I assume it's CS2. If you're not, it should be the same with older versions.

I hope that helped. Good luck.
